Mini Mochi Shoyu Caramel Cakes

Experience the cake that sells out every single day at our Glendale Chocolate Shop & Bakery: It’s a mochi (rice flour) cake studded with black sesame seeds that’s baked once, then absolutely drenched in creamy caramel that’s been infused with umami-rich shoyu (white soy sauce). It goes back into the oven, so all that caramel soaks right into the cake, creating the most satisfying chewy texture. The cake is finished off with a sprinkling of crunchy soy salt — and it’s gluten-free, to boot.
